Decorticated means the tiny, fragrant seeds have been removed from the cardamom pod. Black cardamom is also known as Bengal cardamom and is used as a spice in the same manner that the green cardamom is used, but it adds a very different flavor and smell to dishes. Black cardamom lends a smoky flavor as compared to the sweet, pungent stronger flavor of green cardamom.
